Recipe: Quick Chicken Fajitas

Yields: one serving

  • 2 (7 inch) whole wheat tortillas
  • 1/4 tsp ground cumin
  • 1/2 tsp chili powder
  • 8 oz boneless skinless chicken breasts, cut into strips
  • 1 tsp olive oil
  • 1 cup thinly sliced red and orange pepper
  • 1/2 cup sliced red onion
  • 1 tbsp fat free sour cream
  • salt/pepper to taste

Sprinkle cumin and chili powder over chicken breast strips. Heat medium nonstick skillet and add tsp olive oil. Add chicken strips. Cook 3 minutes. Add bell peppers and onion. Sautee until vegetables are tender and chicken is done. Warm tortillas in microwave for 30 seconds.

Serve chicken/vegetable mixture in tortillas and top with fat free sour cream.
