Healthy Recipe: Shrimp and Zucchini Pasta

This recipe features zucchini pasta noodles, an incredible lower-carb alternative to traditional pasta, with a fraction of the carbs and calories, but all of the taste. Recipe: Shrimp and Zucchini Pasta

Yields: One serving

  • 4 oz shrimp, uncooked, peeled and deveined
  • 1 clove garlic, minced
  • 1/8 tsp red pepper flakes
  • 1 tbsp chicken stock
  • 1 tsp fresh lemon juice
  • 1 zucchini, spiralized* (1 cup)
  • 1 tsp fresh parsley
  • 1 cup fresh spinach
  • 3-4 fresh mushrooms, sliced
  • 2 tbsp fat free raspberry vinaigrette dressing
  • Salt & pepper to taste
  • 1 cup fresh spinach

*Zucchini may be spiralized using home appliance. To save time, purchase zucchini noodles in produce section of many grocery stores.

Place chicken stock in nonstick skillet on medium-high heat. Add shrimp, garlic and red pepper flakes. Cook and stir until shrimp turns pink, about 2-3 minutes. Add lemon juice, salt and pepper to taste and zucchini noodles. Simmer 1-2 minutes until zucchini is tender.

Garnish with parsley. Serve with spinach/mushroom salad with fat free dressing.
