Scrambled Eggs with Fresh Vegetable Medley Recipe

Start the day off right or have a healthy “breakfast for dinner” meal with this incredible, edible scrambled egg recipe. Packed with a variety of veggies, it’s low on calories and fat but high in protein and flavor.

Recipe: Scrambled Eggs with Fresh Vegetable Medley 


Yields: One serving

  • 8 oz Egg Beaters or 3 eggs, lightly beaten (limit eggs to 3/week)
  • 1 cup fresh asparagus, finely chopped
  • 1/2 cup mushrooms
  • 1/4 cup onion, chopped
  • 1/4 cup red bell pepper
  • 1 tbsp salsa
  • Cooking spray
  • Parsley


Add cooking spray to nonstick skillet. Sauté onion, pepper and mushrooms until tender. Add eggs and asparagus to pan. Cook over medium heat until eggs are soft-set. Top with salsa.
